    • Whole Food Plant Based CAMPING TRIP!

    • That's right folks... You can still enjoy all the good times of camping and EAT HEALTHY!!

       

            Last weekend My family and I had the privilege of joining Veteran mommy and her family on a camping trip. I figured all rules out the window and planned on just enjoying myself and feeling sluggish and blah afterward. But, NO Veteran Mommy is so on the ball. She called a few days before to make sure we each planned a breakfast, lunch, and dinner. Most of what we planned was whole food plant based meals....that's not to say we didn't splurge here and there with some desserts.

       

      We left after lunch and headed up to our campsite. We got there and had camp set up just in time for dinner, it was my turn: Bean tacos  topped with an amazing fresh salsa from our local grocer, (way too expensive, in fact, don't tell Maintenance Mommy or she may not sleep for days!) One day I will buckle down and make my own. They were quick and easy which was exactly what we needed.

       

       Breakfast was fun, Muesli for the adults and peach cobbler for the kiddos, yum!

       

      Then lunch, Veteran Mommy was up and I couldn't wait!  We had delicious Morningstar Chipotle Black Bean Burgers topped with avocados, tomatoes, and crispy oriental salad and yummy dressing all wrapped up in a whole wheat tortilla. They were delicious and so filling! **

       

      Dinner was my turn and a classic dutch oven meal turned vegan. It's the whole meat and potatoes with Mushrooms instead of meat. YUM!  I like to take the Roasted Veggie Dinner and triple it and throw it all in a dutch oven. 

       

      Breakfast the next day was a honey whole wheat pancakes with left over fruit.

       

      ** The chipotle black bean burgers were too spicy for the kids, so we had just a few cans of vegetarian chili on hand with chips to make a quick taco salad. It seemed to work out just fine.

      We had such a great time and I was so thrilled not to come home feeling like I need to do a juice cleanse or eat only kale for days to recover! I can't lie and say I didn't have one too many s'mores and granola bars.... but hey its still camping right?
