
I just wanted to highlight one of my absolute favorite meals. It is quick, easy, and packed full of powerful nutrients! I am challenging myself to eat a full pound of fresh veggies and and full pound of cooked veggies every day for 6 weeks. This will be one of my staple go to meals.
I love when I can start my day knowing what will be for dinner. I have been using my crock pot a lot lately. It works great for soups, but today I used it for my yams. I put two large yams in my crock pot for 8 hours and when I came home from the gym tonight I was able to quickly put together this delicious meal.
Ingredients:
1 large cooked yam
1 red pepper, chopped lengthwise
3-4 steamed kale leaves. chopped
1 cup black beans
salt and pepper to taste
Directions:
Split the red pepper in two parts. Mash yam and use it to fill each red pepper and top that with the 1/2 cup of black beans. I also like to put the leftover scoop of mashed yams on top of the steamed kale. It is truly a flavorful nutrient packed meal. Give it a try!
