      I love peach season!  My sister makes a fabulous peach cobbler, and I was curious to see if I could make a similar one that didn't have so much butter and sugar.  Let me just say, it worked!  Yahoo, a delicious dessert that is "relatively" healthy.  Yum...the smell of fresh cobbler throughout the house. Your family will love you for this one.  Well, let's be honest, I say I make this for my family, but I think secretly deep down I'm making it for me :)!

       

       

      5 cups of peeled, sliced peaches*

      1/4 cup of Raw Sugar  - I bought this at Costco (you could also use agave or maple syrup)

      1/2 cup of water

       

      Combine all these in a large saucepan, and bring to a boil over medium heat.  Once boiling, turn to low, and allow it to simmer for 10 minutes. 

      Meanwhile, prepare the cobbler.

       

      3/4 cup all purpose flour

      3/4 cup whole wheat pastry flour (this is "fluffier" that regular whole wheat flour, although that would work too)

      2 tsp baking powder

      1/4 cup raw sugar

      1 tsp cinnamon

      1/2 tsp salt

      1 1/2 cups Vanilla Almond Milk (or any plant milk)

      2 TBS Earth Balance butter (this is the best non-dairy "butter")


      Turn the oven on to 350 degrees.  Place the TBS of butter into a 9x13 and put it in the oven while it preheats to melt the butter.

      Mix  dry ingredients with the milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Batter will rise to top during baking. Bake for 30 to 45 minutes.


      *Step 1:  Bring a large pot of water to a boil

      Step 2: Drop peaches into the boiling water (about 10) and boil for 1 minute

      Step 3: Scoop them out of the water and immediately into ice cold water

      Step 4: Remove the skin
