Granola Bars (raw)
1 ½ cups buckwheat groats (approx. 3 cups sprouted)
2 cups Oats (quick or non-quick)
1 ½ cups dried shredded unsweetened coconut
1 ½ cups almonds (crushed)
¾ cup sesame seeds
¾ cup sunflower seeds
1 tsp. cinnamon
½ tsp. sea salt
Optional ingredients: chocolate chips, dried cranberries, raisins
1 cup almond butter (or peanut butter…I usually do a little of both)
3/4 cup raw honey (needs to be raw)
5-6 TBS coconut oil
1 ½ tsp vanilla
Sprouting the buckwheat groats:
Soak the 1 ½ cups groats in water overnight. In the morning, rinse them well and drain them well and set in sprouting tray. Rinse and drain that evening. Rinse and drain the following morning. They should be sprouted enough by early that afternoon.
Combine all the dry ingredients in a bowl and mix together. Combine the wet ingredients in a separate bowl and mix together until smooth (may need to microwave the wet ingredients slightly to remove the lumps). Then pour the wet ingredients into the dry ingredients and mix well.
Note: Any nut, seed or grain can be substituted into recipe. Add more dry ingredients or more wet ingredients depending on your taste.
Press the mixture into a large cookie sheet- making the mixture as thick as a granola bar. Put in the freezer until firm. Cut into individual bars and cover each bar with plastic wrap. Place granola bars in freezer- ready to eat.
