Black Bean Salsa with Pineapple
1 can black beans (rinsed & drained)
1 can (8 oz) pineapple tidbits, drained
½ small red onion, chopped
1-2 roma tomatoes, chopped
1 garlic clove, minced
2 TBS lime juice
¼ tsp. salt
¼ tsp. ground pepper
Mix all ingredients together and chill in the fridge until ready to serve.
Serve with tortilla chips or over brown rice.
