Tomato & Basil (Bruschetta)

For the bread, I cut a slice of Costco's fresh-baked whole grain

bread.  Then I sliced a clove of garlic in half and rubbed in on

the bread.  I dipped a basting brush in olive oil and lightly spread

it on the bread.  Put it in the oven on broil until toasted.

Mix together:

6 roma tomatoes, blanched, peeled and chopped

2 cloves of garlic

1 TBS olive oil

1 TBS balsamic vinegar

6 basil leaves, chopped

salt and pepper to taste

To blanch the tomatoes, bring a pot of water to a boil.  Add the tomatoes

and then turn off the heat.  Let them sit in the water for about 1 min.

Take them out of the water and then they are really easy to peel.
