Veggie Fajitas
1 medium onion, thinly sliced
1 medium red bell pepper, thinly sliced
1 medium green bell pepper, thinly sliced
1 medium orange or yellow pepper, thinly sliced
2 garlic cloves, minced
Fajita Seasoning or Italian Dressing- seasoned to taste (optional)
2 big handfuls of Spinach
Whole grain tortilla wraps (see homemade recipe)
TOPPINGS
Tomato
Avocado
Cilantro
DIRECTIONS
Saute Onions, bell peppers, garlic and and garlic in a little water until tender. Stir in the spinach until wilted. Place sautéed vegetables in tortilla wrap. Add the desired toppings and roll up. Could also use a big Romaine leaf instead of wrap.
