Super Veggie Spaghetti

Super Veggie Spaghetti

 

1 medium onion, chopped
1 green bell pepper, chopped
1 large carrot chopped finely
2 cloves garlic, minced
1 quart canned tomatoes or 1 big can stewed tomatoes
1 (6 oz.) can tomato paste
1 zucchini, chopped
1 container fresh mushrooms, chopped
1-2 large Kale or Collard Green leaves, chopped very small
1 tsp. salt
½ tsp. pepper
1 TBS sugar
1 TBS Oregano (to taste)
1 TBS Italian (to taste)
Garlic Salt to taste

 

Whole wheat Spaghetti Noodles or
Cooked Spaghetti Squash


DIRECTIONS
Sauté the bell pepper, onion, carrot and garlic in water until tender.  Add the tomatoes, tomato paste, zucchini, mushrooms and Kale.  Mix together then add seasonings to taste.  Cover and simmer for 15 minutes.

Serve over noodles or squash.
