Potato Medley
3 Large Potatoes, cooked and cubed
2 tsp olive oil (or use water to saute)
1 medium onion, thinly sliced
1 medium red bell pepper, thinly sliced
1 medium green bell pepper, thinly sliced
1-2 Large Kale or Collard Green leaf, thinly chopped AND/OR Big handful of raw spinach
2 carrots, thinly chopped
2 garlic cloves, minced
Salt to taste
Seasonings Options
Good Seasons Italian Dressing packet...OR
Garlic Powder, Paprika, Chili Powder & Onion Powder to taste (approx. 1-2 tsp. each)
DIRECTIONS
Sauté onion, carrots, peppers and garlic together until tender. Add cooked potatoes and GREENS and heat until warm. Then add spinach (optional- but so yummy!)- heat until wilted. Serve with avocado and tomatoes on top.
