Onion Lentil Casserole

 

7 oz dry lentils, about 1 cup, rinsed
½ cup uncooked brown rice
2 cups carrots, shredded
½ cup green bell pepper, diced
3 cups water
1 packet onion soup mix, reduced sodium preferred
1 tsp dried basil
1 tsp garlic powder
1 tsp olive oil


DIRECTIONS
Place all ingredients in one large pot. Bring it to a boil.  Reduce the heat, cover and cook until rice is done, about 20 minutes.  Serve with diced avocado and tomatoes on top.
