Lettuce Veggie Rolls
½ cup mashed avocado
Salt and Lemon juice to taste
Leaves of Romaine Lettuce
1 cup cooked brown rice
2 cups shredded carrots
¼ cup shredded red onion
1 diced tomato
1 diced red bell pepper
1 diced cucumber
DIRECTIONS
Mash the avocado with the salt and squeezed lemon juice to taste. Spread the mixture thinly on to each lettuce leaf. Sprinkle rice and diced vegetables thinly on each leaf. Roll up the leaves using toothpicks to hold them together.
