
Trying to entertain guests with a "hearty" vegetarian meal can be a little tricky. Most dishes leave the everyday carnivore looking for the meat. This is finally a recipe that I could proudly make for any guest!
In a large sauce pan saute
1 cup chopped onions
2 small carrots, chopped
3 cloves of garlic, minced
Cook these for about 5 minutes then add
1 small eggplant, cubed
2 cups of snap peas
corn cut from 2 cobs (about 1 1/2 cups)
3 cups of sliced mushrooms (I actually cooked these separate and added last)
1 cup of black beans
Add BASIC CREAM SAUCE (see recipe)
1 TBS fresh grated ginger
2 large TBS of curry paste
1 tsp cumin
1 cup coconut milk
2 TBS orange juice concentrate (optional)
Cook until the vegetables reach desired consistency. Serve over warm brown rice or quinoa.
