Delish Penne dish

 

 

 

1 pkg  Whole Wheat Penne pasta 

1 jar of your fave organic spaghetti sauce

1 cup of frozen corn (canned corn works as well)

2 carrots peeled and chopped

10-12 baby portabella mushrooms chopped 

3 cloves of garlic minced

1 small onion finely chopped

1/2 TBSP olive oil 

2-3 kale leaves chopped  (optional but highly recommended!)

 


Cook pasta according to package. While the pasta is boiling, heat olive oil in large pan on medium. When oil is warm, add onions. Allow the onions to brown, then add garlic, carrots and mushrooms. Cook for about 5-7 minutes, then add the whole jar of sauce and frozen corn to the veggie mixture (feel free to add or omit any veggies you would like). Stir in pasta and kale. Serve warm.
